Ingredients
- Golden curry Japanese curry mix
- Onion
- 2 chicken fillets
- Carrot
- Capsicum
- Potatoe
- Rice
Method
- Boil potatoes for 10 mins
- While boiling Prep your veg and chicken - Chop carrot, onion and capsicum. Dice chicken and season with salt and pepper
- Fry off onion, add capsicum and carrot for 3-5 mins. Take off heat.
- Add oil to pan and fry off chicken until golden. Add in cooked veg.
- Add water and bring to boil. Reduce the heat and leave for 5 mins
- Add in golden curry Japanese curry mix in pieces to the pan. Mix until melted and then leave simmer for 5 mins.
- Drain potatoes and chop into desired bite size pieces. Add to the curry and mix.
- Serve with rice, noodles or on its own!!!
