Ingredients
- 150gms pre-cooked packet Brown Rice (with Chia) from Aldi
- 3x strips of raw carrot ~10cm long
- 3x strips of raw cucumber ~10cm long
- 3x slithers of avocado
- 1 slice of firm tofu ~5mm thick
- 70gms of Chilli canned tuna
- 1.5 sheets of Obento Nori sheets cut diagonally into triangles (3 triangles total
- 1tblsp Obento Sushi seasoning
- 1tsp of fat reduced Kewpie mayo
- Soy sauce to your liking
Method
- Microwave the pre-cooked packet rice for 90seconds, transfer to a bowl then season with sushi seasoning. Mix well and leave to cool. Do this first so the rice is cooled, otherwise it will wilt your Nori sheets.
- Put the slice of tofu in Airfryer with salt (and paprika if u like) to crispen for 2-4mins. Cut the carrot, cucumber, avocado in the meantime.
- Cut 1.5 Nori sheets so you have 3 triangles
- Mix the Kewpie mayo into chilli tuna
- Lay down the cooled rice on the middle sections of the triangle Nori to a depth of no more than 1cm (otherwise it’s too thick and you can’t roll it)
- Cut the tofu into 3 strips. Arrange the cut carrot, cucumber, tofu, avocado and tuna on the rice bed
- Roll as tight as you can and use a few rice grains on the outside to stick the edge in place
- Season with soy sauce to your liking
