Ingredients
- Sunrice sushi rice
- Obento yaki nori for sushi
- Coles I’m free from tempura prawns
- Cucumber
- Sweet chili mayonnaise
Method
- Cook sushi rice according to package instructions then add a pinch of caster sugar pinch of salt and splash of apple cider vinegar then mix through and leave to the side to cool
- Cook tempura prawns as per package and let cool
- Place yaki nori shiny side down onto bamboo mat Spread half of the rice covering as much of the yaki nori as possible but leaving approximately 1cm free from the edgesPlace tempura prawns in the middle of the rice ,cut cucumber into Julienne straws and place on either side of prawn then coat with a squeeze of sweet chilli mayonnaise Start to roll the top downwards to make it form a roll then roll the bottom up so that it completes the sushi roll shape Cut into half or smaller portions depending on your requirements
