Ingredients
- 1 cup sushi rice
- 1 tablespoon rice wine vinegar
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 200g chicken breast
- 1/2 cup Obento teriyaki marinade
- 1 tablespoon cornflour
- 1 avocado
- 1 Lebanese cucumber
- 1 packet Obento yakinori sushi sheets
- 2 tablespoons kewpie mayonnaise
Method
- Combine rice, sugar, salt and rice wine vinegar in rice cooker with recommended amount of water as per your appliance.
- Combine cornflower and teriyaki sauce in bowl and coat pre cut- chicken strips.
- Pan fry chicken until cooked through and removed onto clean plate.
- Slice cucumber and avocado into 1x1cm strips.
- Lay 1 yakinori sheet on a clean bamboo rolling mat. Spread cooled rice onto 3/4 of sheet- leaving a 5cm boarder on one edge. Rice layer should be approximately 1cm thick.
- Place chicken strips, avocado and cucumber in a row in the centre of rice layer. Add kewpie mayo across chicken layer.
- Roll nori sheet towards uncovered rice edge. Roll firmly with bamboo mat into a cylinder shape. Moisten uncovered nori edge with small amount of water to seal rolled sushi roll.
- Cut sushi roll into eight pieces. Repeat with remaining ingredients. Serve with soy sauce.
