Ingredients
- Sushi nori
- 50 ml Teriyaki Marinade
- 2 cups sushi rice
- Cucumber
- Avocado
- Kewpie Mayonnaise
- 500g chicken breast
- 2 tablespoons of sugar
- 4 tablespoons of rice wine vinegar
- 1 teaspoon of salt
Method
- Cook sushi rice as per instructions. Slice chicken and marinade with teriyaki sauce.
- Make sushi sauce for rice:Heat rice wine vinegar, sugar and salt in a saucepan until combined. Add to cooked sushi rice.
- Cool sushi rice.
- Cook chicken. Cut cucumber and avocado into long thin slices.
- Lay a sheet of sushi nori down. Add rice and spread, leaving a 3 cm gap at the edge. Place chicken, cucumber and avocado in a line on top of the rice. Add kewpie mayonnaise. Wet non rice edge. Roll. Repeat.
