Ingredients
- Teriyaki marinade
- 500g diced chicken breast
- 300g rice noodles
- 1 large carrot
- 1 large cucumber
- 2 cos lettuce hearts
- Season with salt & pepper
Method
- Marinade chicken in teriyaki for at least 30 mins (overnight for best results)
- Preheat oven to 180C. Bake chicken for 20 mins or until cooked through.
- Prepare rice noodles as per instructions.
- Slice / grate the carrot, cucumber and lettuce
- Divide the cooked chicken, rice noodles, carrot, cucumber and lettuce between 5 bowls and season with salt and pepper
