Ingredients
- 2 packets habubaku soba noodles
- 1 packet shelled edamame beans
- 900g salmon pieces skin off
- 4 free range eggs
- Kewpie Japanese Dressing Roasted sesame
- 4 tablespoons light soy sauce
- 3 table spoons obento mirin seasoning
- 3 tablespoons obento cooking sake
- 2 tablespoons white sugar
Method
- Combine soy, mirin, sake and sugar in a bowl and stir until sugar dissolves. Place salmon pieces into bowl to marinade.
- Meanwhile, place water in large saucepan on stove place lid on and bring to boil. Cook soba noodles according to packet directions (4mins) and add edamame beans for the last 2 minutes.
- Meanwhile place the eggs in thermomix and cook on egg boiling setting medium approx 11 mins.
- Whilst noodles and eggs are booking heat a non stick pan to medium heat. Cook salmon for 7 minutes turning on all sides.
- Drain noodles and edamame beans. Place in even portions in meal prep containers. Peel eggs and cut in half. Add salmon pieces on top of noodles. Pour sesame dressing over noodles to taste. (Add salad mix leaves just before eating)
