Ingredients
- 2 x 150gm fresh salmon fillets
- 250gm cooked rice
- 80gm diced cucumber
- 10 cherry tomatoes, sliced in half
- 1/4 iceberg lettuce, chopped
- Sliced spring onions
- Obento Teriyaki Marinade
- Lee Kum Kee Teriyaki Stir Fry Sauce
- Kewpie Mayonnaise
- Olive Oil
Method
- Marinate salmon fillets in Obento Teriyaki Marinade & Olive Oil
- Cook 250gm rice
- Heat 1 tspn olive oil in a non stick pan, or pre-heat BBQ grill, medium heat
- Cook salmon until just cooked through, crisp and blacken the skin if preferred
- Prepare vegetables as per ingredients list
- Arrange rice, salmon and vegetables on plates
- Drizzle with Lee Kum Kee Teriyaki Stir Fry Sauce
- Drizzle generously with Kewpie Mayonnaise
- Garnish with sliced spring onions
