Ingredients
- Sauce: 3 tbsp mirin, 3 tbsp cooking sake, 3 tbsp tamari and 1 tbsp brown sugar. Cooked brown rice100g edamame beans1 cup shredded cabbage1 cup julienned carrotsMayonnaiseSesame seeds
- 1 tbsp olive oil
- 800g chicken thigh fillets
Method
- Combine all the sauce ingredients. Mix until brown sugar has dissolved.
- Cut red cabbage and carrot. Defrost edamame beans as per packet.
- In fry pan heat olive oil on high heat, add chicken. Cook for 4 minutes each side. Add teriyaki sauce to pan. Cook chicken for another minute in sauce, then turn chicken and cook for further 1 minute or until sauce is caramelised.Slice chicken. Arrange it on top of a bed of brown rice. Drizzle with sauce from pan. Serve with vegetables, mayonnaise and sesame seeds.
