Ingredients
- 450g Tofu
- 1x 225g can Valcom Bamboo Shoot Slices
- 64g Thai Green Curry Paste
- 1x onion
- 2x red capsicum
- 1x carrot
- 400ml coconut milk
Method
- Dice tofu, slice capsicum, onions and carrot. Drain Valcom bamboo shoots.
- Heat 1 tablespoon olive oil in a pan then brown onions. Add tofu, chopped veggies and Valcom bamboo shoots. Mix well and stir fry for 5 mins.
- To pan, add green curry paste. Mix well to coat tofu and veggies. Cook until fragrant (approx 1 minute).
- Add coconut milk, bring to a gentle boil, reduce to simmer for 10 minutes. Serve with rice :)
