- Heat 2 tbs rice bran oil on low with half jar Valcom green curry paste.Add half can coconut milk and simmer until oil on surface.Add chicken thighs, (cut into 3cm pieces and cook on high 2 minutes. Add remaining coconut milk, tbs fish sauce, 2tsp sugar, snow peas and sweet potato (peeled and cut into 3cm cubes and microwaved 1m 30 seconds on high).Cook another 5 minutes or so, add handful basil leaves take off heat and serve with rice, garnish with dry fried onion and couple basil leaves.
