- Heat up a spoon of olive oil in the panAdd two spoons of thai green curry pasteAdd chopped up chicken thighs or breast piecesAdd half the tin of the coconut milkstir and simmer for 10 minutesAdd vegetables e.g. green capsicum, carrots and brocoliSimmer for 10 minutes and add the rest of the coconut milkAdd a dash of oyster sauce, salt and pepper to tasteAdd bamboo shoots slicedSimmer for additional 5 minutes, add some sugar to balance the flavours.
