Thai Green Curry Chicken

Ingredients
- Thai Basil leaves
- Coriander seeds
- Ground cumin
- Shrimp paste
- Sichuan pepper corn
- Lemon grass
- Galangal
- Garlic
- Onion
- Green chillies
- Chicken
- Fish sauce
- ABC sweet soy sauce
- Coconut cream
- Eggplant or zucchini

Method
- To make curry paste, Blend 5 green chilies, 4 garlic cloves, 1 chopped medium onion, 5cm chopped lemongrass stalk, 5 slices of Galangal, 5 kaffir lime leaves, 1 teaspoon black pepper, 1 teaspoon ground cumin, 1 teaspoon coriander seeds, teaspoon shrimp paste and bunch of Thai basil leaves into a paste.
- To make sauce heat a third of a can of coconut cream in a medium pot. When hot not boiling add curry paste and cook for 2 minutes. Add the rest of the coconut cream and a third cup of water and bring to the boil.
- To make curry add 500g of chicken, three chopped zucchini’s and chopped green beans. Add dash of fish sauce to taste and add ABC sweet soy sauce to taste and cook on high heat till chicken is cooked through. Serve with jasmine rice.
