- 500g boneless chicken 2 tablespoons red curry paste1 cup lite coconut milk1 green capsicum 1 red capsicum 1 sliced mango1/4 cup spring onions1 tablespoon lemon juice1 tablespoon oil
- Stir fry chicken in oil until golden. Add curry paste and stir fry for 1 minute. Add lite coconut milk and red and green capsicum, simmer for 5 minutes. Stir in mango, spring onions and lemon juice over gentle heat. Serve with rice.
