Ingredients
- Salad - 1/4 Cabbage sliced thinly
- Salad - 1 Cos lettuce thinly sliced
- Salad - 1 Carrot grated
- Salad - 1 capsicum sliced
- Salad - 1 mango thinly sliced
- Rice noodles 250g packet
- Salad - * Optional diced chicken breast
- Salad - 1 cup crushed peanuts
- Salad - Coriander
- Peanut sauce - 1/3 cup peanut butter
- Peanut sauce - 3 tablespoons lime juice
- Peanut sauce - 3 tablespoons of water
- Peanut sauce - 3 tablespoons brown sugar
- Peanut sauce - 4 teaspoons rice wine vinegar
- Peanut sauce - 4 teaspoons soy sauce
- Peanut sauce - 1 teaspoon sesame oil
- Peanut sauce - 1/4 teaspoon fish sauce
- Peanut sauce - 1/2 teaspoon Sriracha
- Peanut sauce - 1/2 teaspoon minced ginger
- Peanut sauce - 1/2 teaspoon minced garlic
Method
- Place prepared salad ingredients into a bowl.
- Cook rice noodles for 5 minutes in boiling water. Rinse with cold water and drain. Place in bowl with salad ingredients.
- Optional * cook diced chicken breast and add to salad bowl warm or cooled.
- Whisk all peanut sauce ingredients together until smooth and pour desired amount over salad bowl.
