- 2 Tbs Peanut Oil2 Tbs Red Curry Paste2 rashers bacon roughly chopped2 cups cooked rice2 carrots diced1 cup frozen peas2 eggs1 spring onion sliced2 Tbs sweet soy sauce1 tsp fish sauce
- •Place oil in a wok on a high heat, add curry paste and cook until fragrant, add bacon cook until slightly crisp•Add carrots and peas stir cook for 3-5 minutes•Add rice and stir to coat with curry paste, cook for 2 minutes until rice is heated through and a little bit crisp. Push everything to one side of the wok and add eggs to pan and cook to about 80% done. Add spring onion, sweet soy & fish sauce: stir•To serve, scatter over thinly sliced green ends of spring onionEnjoy!!
