- 4tbsp of olive oil; 210g of Valcom Authentic Thai Red Curry Paste; 400g of coconut cream; 400g of chicken breast fillets, cut thinly; 400g of button mushrooms, cut; Peanut butter, crunchy or smooth; brocollini or any vegetables of your choice
- Fry curry paste in oil for 3-4min, add half of coconut cream and bring to a boil.Add chicken, mushrooms, peanut butter and the rest of coconut cream. Bring to a boil while stirring. Reduce heat and leave to boil for 10 minutes or until the chicken is cooked through. Finally, add vegetables of your choice like brocollini or capsicum, cover, bring to a boil once again and remove from heat.Serve with brown or white rice.
