Ingredients
- 500g finely minced pork
- 2 tblsns coriander leaves
- 2 tspns crushed garlic
- 1/4 cup fish sauce
- 3/4 cup peanut oil
- 1 red chilli seeded
- 1 tspn Grated ginger
- 2 heaped tblspns crunchy peanut butter
- 1 tblspn brown sugar
- 3/4 cup coconut cream
- 1 thlspn chopped basil
Method
- Mix pork with half of the coriander leaves, half the garlic, half the fish sauce
- Knead to a smooth consistency and use wet hands to form the mixture into walnut sized balls.
- Fry in the hot peanut oil until golden brown (approx 5 mins)
- Remove and drain on paper towel (cover and keep warm)
- Cook remaining garlic, diced chilli, ginger for 1 min. Add remaining coriander, fish sauce, peanut butter, sugar & coconut cream on a moderate heat until sauce thickens.
- Add chopped basil before serving on a bed of rice if desired.
