- Use a pestle & mortar to grind fresh ginger, garlic, chilli, salt flakes, fried shallots with Tom Yum Paste!Quickly fry the paste off with the coconut oil, push to one side & add the prawns.After quickly coating the prawns (not cooking completely) remove from the pan.Add the coconut milk to the paste, add the lime leaves, add some grated palm sugar & simmer for 2 minutes before adding back the prawns. Let simmer for a further 5 minutes & it's ready to serve.Cook steamed rice.Garnish with thai basil!DELICIOUS!
