Ingredients
- 250ml Obento rice wine vinegar
- 250ml water
- 2cups sugar
- 4x red chilli
- 4 garlic cloves
- 4 coriander root
- 2 teaspoons salt
Method
- Put salt, garlic cloves, chilli and coriander roots in a mortar and pestle and pound to a paste
- Place obento rice wine vinegar (I’ve tried other brands but this is the best), water and sugar in a pot and bring to the boil. Boil until it reduces by a quarter
- Add the paste and simmer for a further 5 mins. Cool and place in clean jars. This will keep for many months in the fridge and even better you can share some jars with friends !!!!!
