Ingredients
- 1 Cucumber
- 1 carrot
- 3 cups red cabbage
- 2 spring onions
- 250g cherry tomatoes
- 1 cup edamame
- 1 capsicum
- Half cup coriander
- 1 cup Quinoa
- 5 tbs soy sauce
- 2 tbs mirin
- 2 tbs rice wine vinegar
- 3 tbs grape seed oil
- 3 tbs mayonnaise
- 3 tsp sugar
- 2 tsp fresh ginger
- 1 tsp garlic
- 2 tbs sesame oil
- Sesame seeds
- Wasabi peas
Method
- Cut all vegetables small.
- Cook quinoa as directed in packet and let cook.
- Mix dressing.
- Toast sesame seeds.
- Mix quinoa and vegetables together and add dressing.
- Serve with toasted sesame seeds and wasabi peas on the top.
