Ingredients
- Broccoli, red pepper, carrots, garlic and ginger
- Olive and sesame oil, red curry paste, coconut milk
- Fried tofu.
- Cooked jasmine Rice
Method
- Cut tofu into Desired size, drizzle with sesame oil and air fry for 10mins Pre cut all veges. Cook rice as per packet instructions.
- In a pan add a drizzle of olive oil and 3 heaped spoons of red curry paste. Cook for a few minutes and add half a ton of coconut milk. Add carrots and broccoli and simmer for 10 minutes.
- Once tofu has crisped up and veges are tender add tofu into pan with vegetables and add in the peppers. Add in remaining coconut milk and simmer for a few minutes. Add over cooked rice with another drizzle of sesame oil. Wah lah. Dinner is served.
