- Valcom Thai Red Curry Paste (100g)
- Brown onion (diced)
- Green Zucchini (sliced)
- Red capsicum (chopped)
- Tofu (300g)
- Light Coconut cream (270mL)
- Jasmine Rice (1 cup)
- Baby broccoli
- Toss onion, capsicum and zucchini into a frying pan with olive oil and cook on a medium to high heat.
- Add tofu cubes on a medium heat.
- Stir in Valcom red Thai Curry paste and let it sit on a low heat for 10 minutes
- Pour in coconut cream and add baby broccoli
- Cover frying pan with a lid and let sit on a low heat for 5-10 minutes
- In a saucepan boil water with a pinch of salt and cook jasmine rice for 10 minutes.
- Serve the curry on top of a small bed of rice. Serves 4 people
