Ingredients
- 250g firm tofu
- x1 brown onion
- x1 red capsicum
- x1 carrot
- 1 cup green beans
- 1 cup cauliflower
- 1tbsp crushed ginger
- 1tbsp crushed garlic
- 1/2 jar Valcom yellow curry paste
- 400ml coconut cream
- 2 cups wild rice
- Water
Method
- Chop tofu and place in air fryer for 20 mins at 200
- Add wild rice to pot of water and put onto boil
- Dice onion and sauté in a splash of water, once browning add ginger and garlic
- Dice carrot and add to pan alongside coconut cream and yellow curry paste
- Simmer for 5 mins until carrot has softened, then add beans, capsicum and cauliflower
- Simmer until veges are cooked as desired, add tofu from airfryer at the end (will be nice and crispy!)
- Drain rice, serve, enjoy!
