Ingredients
- Hakubaku organic soba noodles
- Fish sauce
- Dark soy sauce
- Light soy sauce
- 3 x garlic cloves minced/crushed
- 1x Chilli
- 500g Mushrooms (shiitake preferred)
- 900g firm Tofu
- 2 x Bok choi
- 300g Green beans
- 5x Spring onion
- Crispy shallots
Method
- Heat oil in the pan on high, Cube the tofu and fry in the pan
- Once tofu begins to brown add mushrooms and mix in the three sauces, garlic and chilli and big chunks of the stem part of the spring onion
- Once cooked through add the chopped green beans and bok Choi
- Once greens are added, cook the soba noodles as per package instructions - in boiling water for 4 minutes.
- Once soba noodles are cooked combine everything
- Garnish with remaining green onion (sliced top part) and crispy shallots
