
Ingredients
- Thai fish sauce
- Minced meat
- Coriander
- Soft tofu
- Lime
- Chilli powder
- Fresh chilli
- Chicken cube
- Ground peanut (optional)
Method
- In a large pot, add 4 cups of water and bring to a boil.Once boiling, add the coriander roots to infuse the broth with their flavor. Let it simmer for 5 minutes.
- Add 3 tbsp fish sauce, 1 chicken cube and 1 tsp of chilli powder to the pot. Stir to dissolve the chicken cube and combine all the ingredients.Let the broth simmer for another 5 minutes to allow the flavors to meld together.
- Add the minced pork to the simmering broth and stir.
- Gently add the cubed soft tofu to the pot. Be careful not to break the tofu too much.Let it simmer for about 5 minutes so the tofu can absorb the flavours.
- Stir in the ground peanuts for added texture and flavour.
- Taste the soup and adjust seasoning if necessary. You can add more fish sauce for saltiness or chilli powder for extra heat.
- Once everything is heated through, remove the soup from heat.Serve in bowls and garnish with fresh coriander if desired.
