Ingredients
- Sushi Rice 250g
- 1-2 Tbs Sushi Seasoning
- Tinned Tuna
- Kewpie Mayo
- Avocado
- Seaweed Sheets
- Cauliflower - optional
- Soy Sauce - optional
Method
- Cook sushi rice as per instructions. Hot tip: Cook double the amount then freeze half for next time for an even faster meal prep.
- Finely chop or grate 1 cup of cauliflower. Put into a microwave safe container with 2 - 3 tbs of water. Cook on high for 2 minutes or until soft.
- To sushi rice add the cooked cauliflower and sushi seasoning. Mix well, leave to cool.
- Prepare tuna by draining the water (use as an offering to your cat if you have one) then mix with a squirt of kewpie mayo.
- Slice avocado.
- When rice has cooled enough we're ready to roll! Place one seaweed sheet onto a bamboo rolling mat. Spread rice evenly across the seaweed, leaving about 2 - 3 cm on the far edge. This part we will use to 'glue' the nori roll together.
- Along the middle of the rice, place some avocado and tuna for the filling. Gently roll seaweed using the bamboo mat to gently press as you go.
- Add droplets of water to the seaweed strip as you roll and glue together. Nori rolls can be cut in half or into small rounds.
- Serve with soy sauce and enjoy!
