Ingredients
- 2 Tbs oyster sauce
- 4 tsp soy sauce
- Handful of Cashews
- 1 tsp of ginger paste
- 2 tsp of garlic paste
- 1 tbs water
- 2 tsp sesame oil
- Udon noodles
- Packet stir fry mix
- Pak Choy
- Half a capsicum
- Handful of snow peas
- Half head of broccoli
- Spring onions
- Fried shallots
- Chilli oil
Method
- Mix together all wet ingredients to create sauce in a small bowl. Save some oil for the pan.
- Chop and rinse vegetables.
- In a pan, heat oil and add your veggies. Sauté until bright in colour.
- Boil water in the pan and add your udon noodles as per the packet instructions.
- Add your sauce to the pan and saute with veggies. Add in the cashews.
- Drain and rinse your udon and add to the pan with veggies and cashews.
- Garnish with spring onions, fried shallots and crispy chilli oil.
