Ingredients
- 200 g. plain flour (or bread flour)
- 1 tsp salt
- instant yeast
- 125 ml of milk
- 2 potatoes diced
- 1 carrot diced
- 1 onion diced
- 2 curry roux blocks
- 2 cloves garlic minced
- water
- panko crumbs
- egg
- neutral oil for frying
- 1/2 tbsp sugar
Method
- First step is to make the dough. Mix flour, sugar, yeast, salt and milk. Mix and kneed on a countertop until its smooth and elastic, let it sit in a warm place while you do the other steps.
- Next, we need to make the filling! I like mine vegetarian using finely diced potato, carrot, and carrot. In a frying pan add your vegetables and fry for a few minutes. When the veggies look golden from the fry add some water and over for a few minutes to get the vegetables soft. At this point, you can add the Curry Blocks (i used S&B Hot Golden Curry) add 4 tbsp of water and mix until the curry blocks dissolve. You might find that it isn't enough water so you can add a splash of water as required. You are looking for a paste-like consistency as opposed to being saucey. Let it sit to cool down to room temp.
- Next lets cut the dough in 6 even pieces. Roll each dough piece into a 5" diameter circle. add cooled filling in the middle, a few spoonfuls should do.. Draw up two edges of the circle of dough to the middle and pinch to seal, forming a football shape. Then roll the football shape a little to flatten the seam.
- To bring this to the next level, lightly beat an egg and roll the parcels into the egg wash followed by a plate of panko crumbs. This will add so much crunch and texture. Do this for all 6 parcels and place to the side.
- Final step! Heat oil to approx 160 Celsius. Carefully place two parcels into the oil using chopsticks. Fry 2 minutes on each side, or until golden brown. After frying place on a tissue to collect excess oil. DONE!
