Ingredients
- 300g Tofu Puffs
- 1 Large Zucchini
- 1 Can Valcom Bamboo Shoot Slices
- 2 Cups Jasmine Rice
- 1 can coconut cream
- 1 tbsp green curry paste
- 1 tbsp oil
- 1 clove garlic
- 1 tbsp soy sauce
- 1 tsp sugar
- 1 lime leaf
- 250g snow peas
Method
- Brown finely chopped garlic in oil over medium heat
- Add curry paste and heat until smooth soft consistency.
- Add coconut cream, soy sauce, sugar, lime lead and bamboo shoots. Bring to a simmer
- Once simmering add zucchini, tofu and snow peas. Reduce heat to low and let simmer for as long as you like.
