Ingredients
- 8 sheets of rice paper120gm thin rice vermicelli
- Vegetables - 1 carrot & 1 cucumber thinly sliced longwise, 1/2 cup shredded red cabbage, 1/2 avocado sliced, 1/2 cup cherry tomatoes sliced, 6 strawberries sliced, 8 stripes of chives & 1 cup lettuce
- 1/2 cup canned chick peas1/2 cup shelled soya beans
- Peanut Sauce - 4 tablespoons peanut butter, 2 teasppon brown sugar, 1 1/2 tsp vinegar, 1 tsp Squid Fish Sauce & 4 tablespoon water
- Soya Dipping Sauce - 2 tablespoon soya sauce, 2 tsp sugar, 1 tablespoon sweet chilli sauce, 1 tsp Squid Fish Sauce, 2 tablespoon water & juice of 1/2 lemon
Method
- Prepare vermicelli noodles by soaking in hot water for 10 min, rinse in cold water & drain it.
- Prepare veggies - chop, slice & shredCook shelled soya beans in microwave for 1 minute.
- Prepare the peanut & soya dipping sauce by mixing the ingredients together
- Ready to assemble the rolls.Dip the rice paper in a large bowl of warm water. Place it on a flat surface, place the ingredients You want to showcase on the top part of the rice paper & the other ingredients on the lower part.Start rolling & when half way, fold in the sides & roll it up .
- Dip in your favourite sauce - peanut or soya & enjoy these healthy yummy rolls!
