Ingredients
- Baby corn
- 1 x carrot
- 1 stalk of broccoli
- 1 tbsp oil
- 150g vermicelli noodles
- 1 jar of Valcom Laksa paste
- 2 cups lite coconut milk
- 400ml water
Method
- Heat oil and paste til you can smell the paste. Soak noodles in cold water in a separate bowl for 15 minutes.
- Stir fry veggies until lightly tender
- Pour in coconut milk and water, stir and bring to the boil
- Drain and chop up noodles and put them into pan until laksa starts to thicken
- Turn off pan and serve with dried shallots and coriander leaves
