Ingredients
- Tbs Coconut oil
- 1/2. Jar Laksa paste
- 1 can Full fat coconut milk
- 1 cup stock
- 3 Carrots
- 1 Capsicum
- Handful Beans
- Vermicelli noodles
- Coriander
- Bean shoots
- Dash Oil
- Tsp Garlic
- Tsp Ginger
- Tsp Lemongrass
Method
- Heat oil in pan
- Fry off garlic & ginger & laksa pasta
- Add coconut milk & stock, bring to a simmer
- Cook vermicelli noodles as per packet
- Add chosen vegetables to pot and cook until tender. About 15 minutes
- Serve noodles into portions and add broth & vegetables on top.
- Top with coriander, bean shoots & a dash of oil. Enjoy
