- Pumpkin, onion, zucchini, ginger, yellow curry paste, coconut cream and crushed peanuts
- Heat pan and add a little oil.
- Add ginger, pumpkin, zucchini and onion and cook for 5 minutes.
- Add curry paste and coconut cream and bring to boil. Then cover and simmer for 20 minutes.
- Serve with rice and crushed peanuts on top.
