Ingredients
- 6 Shitake mushrooms
- Garlic, chopped
- 2T Mirin
- 1/4 cup Soy sauce
- Pepper
- 2 T Sugar
- Sesame oil
- Sesame seeds
- Sweet Potato noodle, 4 serves
- 1 Carrot, julienned
- 1/2 Capsicum, julienned
- Bunch Spinach
- Salt
- 1 Chilli, finely chopped
Method
- Soak shitake mushrooms for 20 mins in all sauces and pepper. Remove and finely chop.
- Boil water and cook spinach for 1 minute then drain. Cook potato noodles and drain.
- Cook garlic, Capsicum, carrot and chilli. Add marinated sauce and salt.
- Combine spinach, noodles and veggies. Top with sesame seeds
