Ingredients
- Onion
- 2 mushrooms
- Carrot
- Zucchini
- Capsicum
- Potatoes
- Japanese curry pack
- Rice (to serve)
- Spinach leaves (to serve) - optional
Method
- Prep all vegetables to liking.
- Heat oil in large saucepan. On medium heat, cook onion until golden, then add mushrooms and continue cooking until brown. Then add all other vegetables, stirring frequently, and cook until soft.
- Add water to pan and heat until boiling. Then add curry pack and stir until all dissolved.
- Cook rice as desired and serve
