Ingredients
- 2 cups Jasmin Rice
- 1 x 400 no can coconut milk
- 1.5 cups water
- Punch of salt & teaspoon white sugar
- Mango slices & passionfruit
Method
- Rinse the rice until water is clear & strain
- Place rice and other ingredients into medium size saucepan
- Bring to boil
- Turn down heat & cover with lid
- Turn heat down & cook covered for 15-20 minutes - stirring to avoid stocking
- Uncover & cook for a further 5 minutes to allow excess moisture to evaporate
- Fluff with fork & add mango slices and passionfruit
- Can also be served with your favorite curry - just leave out sugar & fruit & top with cilantro
