- 3-4 Garlic cloves
- 1 cup Jasmine rice
- 1 knob of Ginger
- 1 Carrot
- 1 Pear
- 500g Pork mince
- 1/4 cup Sesame oil
- 50g Oyster sauce
- A handful Roasted peanuts
- Small premade bag of Shredded cabbage mix
- 40g of Butter
- 1 -2 tbs Rice wine vinegar
- 1 1/2 tbs Brown sugar
- 1 tbs Soy sauce
- 1 Egg
- Small dash Olive oil
- 1 1/4 cup Water (rice)1 tbs water (for sauce)
Method
- Make the garlic rice!Finley chop the garlic. In a medium saucepan melt butter with a dash of olive oil. Cook until fragrant. Add the rice, water and stir. Bring to the boil. Reduce heat to low to cook the rice. Remove from heat and keep covered whilst preparing the rest of the dish.
- Grate ginger & carrot ready.
- Prep the pork by combining pork mince, ginger and sesame oil.Put some olive oil in the pan and brown the pork mince, breaking it up with a soon as cooking (3-4 mins) add the brown sugar, cook and stir until sticky. Reduce heat to low and add oyster sauce, soy sauce & more water.
- In a large bowl then combine the cabbage mix, carrot and rice wine vinegar. Season with salt and pepper and toss to combine.
- Crack & egg and cook (2-3 mins)
- Slice pear into thin slices.
- Add rice into bowl. Top with caramelised pork, cabbage mix, fried egg, pear & garnish with roasted peanuts.
