- 1/4 red cabbage1 chicken breast1 medium carrot1/2 red onion3 spring onion1 small cucumberhandful minthandful coriander2-3 red chillies

- Put chicken breast in a pot of hot water and poach on simmer for 10 mins. once done, cool then shred chicken either by hand or on slice by food processorShred red cabbage, carrot, cucumber, red onion.chop mint, coriander, chillies and spring onion. Combine all chopped/shredded ingredients in a mixing bowlCombine all dressing ingredients and whiskPour dressing over other ingredients.Ready to eat.
