
Ingredients
- Cooked Rice (Fresh or Day Old)
- Spring Onion (Optional)
- Frozen Veggies (Peas, Carrots)
- 4 eggs
- 4 gloves of garlic
- ABC Sweet Soy Sauce Kecap Manis
- Left Over Protein Cooked or uncooked (e.g. Meat, Seafood, Tofu)
- Salt
- Light Soy Sauce
- Neutral Oil
- Chill Flakes (optional)
Method
- The best way to cook fried rice is the prepare all ingredients ready to go before cooking
- Lightly beat eggs with splash of water and pinch of salt, Mince Garlic, Chopped Protein, Cooked Rice
- In a wok, preheat oil and fry scrambled eggs until well cooked and remove from wok. Let eggs cool and roughly dice to chunks
- Preheat a little oil and fry frozen veggies and remove from wok
- Finally, preheat oil and cook proteins of choice until fully cooked. I prefer seared meat, left over pork belly, prawns, pan fried tofu as ideas.
- Remove protein but try to keep as much of the oil in the wok as this will form the flavouring of the fried rice
- Let remaining oil in wok cook, and add more oil if required and brown garlic over low heat until golden brown
- Add rice (Day old or fresh) and stir fry on high heat, trying to coat all the rice grains in flavourful oil
- Add back cooked protein, and veggies and toss in with rice, remaining on high heat
- Add light soy sauce, ABC Kecap Manis, and chilli flakes to taste.
- Finally add back diced eggs, lower heat and toss one more time. Serve instantly and garnish with spring onions. Bon Appetit
