Ingredients
- 250g beef cut into bite sized pieces
- 4 tbsp Obento teriyaki marinade
- 2 tbsp cornflour
- 140g jasmine rice
- 2 corn cobettes
- 2 tbsp vegetable oil
- 1 red onion finely chopped
- 2 garlic cloves, crushed
- 1 tsp ground ginger
- 2 tbsp basil leaves, chopped, retain a few whole leaves for garnish
- 1 chilli, finely chopped
- 150g prawns
- 2 tbsp sesame seeds
- 2 tbsp finely chopped parsley
Method
- Marinade beef with 2tbsp of the Obento teriyaki marinade mixed with cornflour. Leave in fridge for 20 minutes.
- Cook jasmine rice for 12 minutes or according to pack instructions.
- Heat half of the oil in a frying pan. Cook beef for 5 minutes or until browned on a medium heat, turning to make sure it doesn’t stick. Set aside.
- Heat the rest of the oil in a frying pan. Cook onion on medium heat until soft. Add beef, half of the garlic, ginger, chopped basil, half of the chilli and the rest of the Obento teriyaki marinade. Cook for another 3 minutes or until beef is cooked.
- Boil corn cobettes in water for 5 minutes. Cut corn off the cob and add to beef.
- Cook prawns in a frying pan on a medium heat with parsley, rest of chilli and rest of garlic for 4 minutes.
- Toast sesame seeds in a small frying pan for 3-5 minutes .
- Serve jasmine rice in a bowl with beef on top. Lay prawns on top and sprinkle with sesame seeds. Add basil leaves to garnish.
