Ingredients
- 500g Berliner Fleischwurst (or substitute Devon) slices
- 200g Gouda or Swiss Cheese slices
- Dill Pickles (as many as you like, ideally 5 pieces)
- 1 Brown Onion (thinly sliced)
- 3 tbsp Obento Rice Wine Vinegar
- 3 tbsp White Wine Vinegar
- 3 tbsp Pickle Juice (from the pickle jar)
- 2 tsp Mustard (German, Dijon or any mild mustard)
- 2 tbsp Neutral Oil (sunflower, vegetable, mild olive)
- 1/2 tsp Sugar
- 1/4 tsp Salt
- 1/4 tsp Freshly cracked pepper
- Fresh crusty bread to serve
Method
- Cut up both the Berliner and Cheese into small strips and place in a large salad bowl.
- Dice the pickles and add them to the bowl, then refrigerate the salad to keep all the ingredients chilled while you make the dressing.
- To make the vinaigrette, add all the liquids, mustard and seasonings to a bowl or jar, and whisk or shake until fully combined.
- Pour the vinaigrette over the salad and mix well.
- Top the salad with thinly sliced onions and serve alongisde some fresh crusty bread.
