Ingredients
- 8 pieces of Chinese Sausage 100g x Har Mai (Dried Prawns)100g x Dried Cuttlefish100g x Dried Scallop300g x Pork Belly meat300g x Mixed Mushrooms and Black Fungus (Black Fungus is Optional ) 1 × can of Valcom Water Chestnut Slices
- 3 cups of Jasmine Rice.
- Spring Onions for Garnish
- 1 knob of Ginger to be minced with 3 cloves of Garlic
Method
- 8 x Lap Cheong (Chinese Sausage) cut into small pieces. 100g x Har Mai (Dried Prawns) soaked in warm water and roughly chopped up. 100g x Dried Cuttlefish soaked in warm water and cut into small pieces.100g x Dried Scallop soaked in warm water and cut into small pieces. 300g x Pork Belly meat cut into small pieces and marinated with sesame oil, oyster sauce, soy sauce, white pepper powder, Chinese wine and sugar.Mixed Mushrooms and Black Fungus soaked in warm water and cut into small pieces. Valcom Water Chestnut Slices, drained the juice out and cut into small pieces.
- Heat up your wok and put it 2 tablespoon of oil. Put in some minced ginger and minced garlic and fry till fragrant.Put in the Chinese sausage, dried prawns, dried cuttlefish and dried scallops and fry until a bit brown and fragrant. Put in the marinated pork belly meat and the mixed mushrooms with black fungus and stir fry until meat is cooked. Put in the sliced water chestnuts and stir fry everything and Stir in 2 tablespoon of dark black sauce, light soy sauce, sesame oil, oyster sauce and Chinese wine. Seasoned with a bit of white pepper, 1 tablespoon of sugar and 1 tablespoon of chicken bouillon powder.Leave it aside.
- 3 cups of Jasmine Rice, washed and let it boil in Rice cooker. (Only put in half the amount of water that you normally cook rice) When the water is boiling in the rice cooker, pour in all the stir fried ingredients with all its juice and sauce, and let the rice cook in until done.
- Once rice is cooked, garnish with scallions.
