
Ingredients
- 1 tbsp oil, for frying
- 1 large onion, chopped
- 3 garlic cloves, crushed
- Broccolini – about 8 cooked florets
- 6 large mushrooms, sliced
- 1 red capsicum (pepper), chopped
- 1 green capsicum (pepper) , chopped
- Handful of frozen peas, cooked
- 500g chicken, chopped
- Noodles, to serve
- Lee Kum Kee Classic Cantonese Stir-fry Sauce for Honey and Soy Chicken
Method
- Heat about half the oil in a wok, add the onion and garlic and cook for a few minutes till onion is lightly golden.
- Add the chopped peppers and sliced mushrooms and keep stirring till all is cooked, as you like it. I like the pepper to be a little crunchy.
- Cook the Broccolini and peas in the microwave and then add to the mix. Transfer the vegetable mix to another pan, so you can cook the chicken next.
- Add the rest of the oil to the wok and stir fry the chicken. Add the vegetable mix to the chicken and stir well.
- Add the stir fry sauce. When hot, serve in bowls, containing the noodles you have cooked in another pan. Enjoy!
