Ingredients
- Chicken breast
- Valcom green curry paste 210gm
- Valcom coconut milk 400ml
- 2x shallot onion
- 2x cloves garlic
- Splash fish sauce
- Teaspoon white sugar
- Corriander
- Lime
- Snow peas
- Snake beans
- Green peas
- Green chili
Method
- Fry shallots, garlic, and green chilli until translucent. Add valcom paste and follow instructions on jar (add valcom coconut milk, cook, add chicken and rest of milk and sugar and fish sauce, cook until fragrant).
- Add cut vegetables to curry and cook until just tender (will continue to cook in residual heat after cooking)
- Assemble in bowl with rice as a base, curry on top. Garnish with corriander, sliced lime and sliced fresh green chilli.
