Ingredients
- Lee Kim San Choy Bao sauce
- 8 lettuce leaves
- 1 garlic clove minced
- Diced yellow & red capsicum
- Diced red onion
- 1 carrot diced
- 300g pork mince
- Salt & pepper
- 50g water
- 1 tbsp spring onion diced
- 75g mushroom sliced
- 1 cup mixed brown/white sun rice (microwaved 40 seconds)

Method
- Heat oil in pan and stir fry garlic, onion, capsicum 1 minute.
- Add pork, brown add salt & pepper and stir fry 2 mins. Add 2 tbsp water and cover 1 minute.
- Add carrot & mushroom and stir fry 1 mins. Stir in packet sauce, cook 2 mins.
- Lettuce in plate - spoon in rice, sauce and top with spring onion
