Air-fried Miso Chicken Katsu

Ingredients
- 2 Chicken Breasts
- 2 tbsp Miso Paste
- 1/4 cups of plain flour
- 2 eggs
- ½ Panko Crumb
- 3 tbsp Tonkatsu Sauce
- 2 tbsp Kewpie Mayonnaise
- 1 tbsp oil
- Sprinkle of Bonito Flakes
- Sprinkle of Nori, cut into small flakes
- Rice
- Favourite vegetables

Method
- Butterfly the chicken breasts and flatten
- Massage miso paste into the chicken breast in a ziplock bag and leave to marinate in the fridge for at least a few hours or overnight
- Coat the chicken in flour
- Whisk the eggs and coat the floured chicken
- Place the egg washed chicken in the panko crumb until well coated
- Lightly spray the chicken in olive oil and cook at 180C for 15 minutes in an air fryer.
- Flip the chicken and cook for a further 10 minutes
- Serve the chicken hot on rice with your favourite vegetables and a drizzle of tonkatsu sauce, a sprinkle of bonito flakes, and a sprinkle of nori flakes.
