Baked cabbage with red miso butter

Ingredients
- 1 small drum cabbage, or 3-4 wedges
- 1 tablespoon vegetable oil
- Salt
- 100g butter softened
- 1 and a half tablespoons miso, white or red
- 1 tablespoon mirin
- Dried shallots for garnish

Method
- Preheat oven 200o Cut cabbage into wedges. Drizzle with oil and salt. Place cabbage on a lined baking tray. Bake 30 minutes until golden and soft.
- Mix butter, miso and mirin in a small bowl until well combined. Once the cabbage is cooked, spread the butter over the cabbage and place back in the oven for 10 minutes
