Baked Dumplings in Satay Sauce

Ingredients
- 1 cup broth
- 1/3 cup peanut butter
- 3 cloves, minced
- 4 tbsp soy sauce
- 2 teaspoons rice wine vinegar
- 1 cup broccoli
- 1 book choy
- 1 packet dumplings

Method
- Preheat oven to 200°C
- To a dish, add broth, peanut butter, garlic, soy sauce and vinegar. Whisk to combine, so that the peanut butter is mostly dissolved in the liquid.
- Nestle the broccoli, bok choy and dumplings into the sauce.
- Cover the dish and bake for 20 mins or until dumplings and veggies are tender. Uncover and bake for an extra 5 mins.
- Serve over rice or noodles.
