Baked Salmon with Udon Noodle

Ingredients
- Hakubaku Organic Udon noodle
- 3 cm ginger, finely chopped
- 150 gm Salmon Fillet, skin on.
- Obento Yaki nori-4 sheets, cut into 1 cm strips
- Obento Mirin Seasoning - 4 Tablespoons
- Salt reduced soy sauce - 4 Tablespoons
- 1 Spring Onion- finely chopped
- 1 tablespoon sesame seeds
- 8 drops of Sesame Oil

- HAKUBAKU - ORGANIC UDON NOODLES
Method
- Combine the soy sauce, Mirin seasoning and chopped ginger in a bowl.
- Marinate the salmon in the mixture whilst preparing the spring onion and Yaki nori
- Preheat oven to 200 degrees Celsius and put a medium saucepan of unsalted water on to boil
- Remove the salmon from the marinade, and place the Yaki nori strips in the marinade.
- Gently squeeze the marinade from the Yaki Nori strips and place the bunched strips on a lined baking tray
- Place the salmon fillet on top of the Yaki nori and bake for 10 minutes
- In the mean time, cook the Udon noodles in the boiling water (8 minutes)
- Drain the noodles and place them in a bowl, adding the spring onion, sesame seed and sesame oil. Toss.
- When the Salmon is cooked, serve the noodles, top with the baked Yaki Nori , then the Salmon fillet
- Drizzle some of the remaining marinade over the arranged dish and serve.
