Theme: One Bowl Wonder
Beck’s One Pan Laksa Red Curry Dumplings

Ingredients
- 2 tablespoons of red curry paste
- 1/2 jar of Laksa paste
- 2 tins of light coconut milk
- 200gm shiitake mushrooms minced
- 1 teaspoon of miso
- splash of rice wine vinegar
- 200ml chicken stock
- 2 finely chopped Bok Choy
- 2 bunches of Broccolini
- 3 tablespoons of Soy Sauce
- 1/4 cup of oyster sauce
- 1 packet of Korean Beef Dumplings
- 1 packet of honey soy dumplings
- Crispy chilli oil
- 1/2 teaspoon Sesame Oil
- 2 tablespoons minced fresh garlic
- 4x egg noodle nests

Method
- Place all wet ingredients in a deep dish pan and whisk together until combined
- place the 4 noodle nests in the liquid. Ensure they are immersed in the liquid. Add garlic and shiitake mushrooms to liquid. Stir in. Add bok choy and arrange broccolini around the pan to ensure it is covered in liquid.
- Place the dumplings on top of all ingredients in the pan ensuring they are partially immersed in the liquid. Cover in foil and place into a 200-degree pre heated over on the middle shelf.
- Cook for 25 minutes. Take out of the oven and lift off foil. Stir the ingredients together. Try to maintain the shape of the noodle baskets. Turn the dumplings and ensure they are still immersed in the liquid.
- Place the dish back in the over uncovered for 20 minutes.
- Take out of the oven Place a noodle nest in each bowl with broccoli and sauce on top. Place dumplings on top and add crispy chilli oil as desired on top of the dumplings.Enjoy!!
